Mini Pancakes with Sweet Maple Cream Cheese

Happy Monday Kringlers! My favorite meal of the day is breakfast. I would have it anytime of the day, for dinner and lunch. So for dinner tonight I'll be having these decadent Mini Rainbow Pancakes with Sweet Maple Cream Cheese. They're not for everyday but definitely a sweet treat for all the hard work we in North have been doing to get the Inventionasium ready for Krismas!

Pancake Mix
1 1/4 cup of flour
3 1/2 Tbsp. Sugar
3/4 tsp. Salt
2 tsp. Baking powder
1 Egg
1 1/3 Cup of milk
3 Tbsp. Oil
3/4 Tbsp. Vanilla Extract
1 Tsp. Apple Cider Vinegar
Red, yellow, orange, green, blue and purple food coloring

-In a bowl add the milk and apple cider vinegar, let it sit as you get the rest of the ingredients together.
-In another bowl whisk together the egg, oil, vanilla and sugar.
-Combine the flour, salt baking powder and mix.
-Combine all the ingredients and mix them well.
-Split the batter into 6 portions and color each portion a different color.
-Use a tbsp measurement to scoop out each pancake, so they are all the same size.

Sweet Maple Cream Cheese
4 oz cream cheese
1/2 - 3/4 cup Powdered Sugar
1/4 cup maple syrup
1/2 tsp vanilla extract

-Mix together the cream cheese, maple syrup and vanilla extract.
-Add in the powdered sugar.

Now stack and smear, then repeat until you have a stacked rainbow tower of goodness! Feel free to add some flair with an overflowing drip, colored sprinkles and a cherry.
